My favorite meal of the week is Sunday brunch. Whenever I host big parties for brunch, I try to come up with recipes that aren’t too time consuming, so I could serve everyone quickly. My banana, peach and berry yogurt parfait is healthy, refreshing, sweet, and an easy dish to add to the mix. Plus, it is especially full of color and vibrant on the table, if arranged properly. Fresh, ripe berries in Spring are just perfect for this nutritious and delicious dish. I balance the colors of the fruits, assemble in layers and create a contrast for a beautiful presentation. A wholesome breakfast, light brunch or on-the-go snack, banana, peach and berry yogurt parfait is the quick and easy go to idea.
– 3 cups of Danon Vanilla Greek Yogurt Light&Fit
– 1 cup salty crunchy granola (granola flavor optional)
– 12 strawberries, sliced
– 1 bunch of blueberries
– 3 peaches in syrup
– 3 bananas, sliced
– 1 Tbsp. honey
Start off by washing all the fruit. Drain the peaches from the syrup and dice them. Slice the strawberries and then the bananas into rounds while leaving the blueberries whole. When arranging into the bowl put the yogurt more towards the center so you can create a border of food around it. First, arrange the layer of strawberries, then bananas, then blueberries, and lastly peaches, while reserving a little bit of each fruit on the side in case you need to add some color on top. Sprinkle granola on top and finish the look by drizzling honey over it. Put more granola on the side so that it stays crispy for your guest.
Tip: This banana, peach and berry yogurt parfait is light and goes quickly so double the ingredients if necessary.
