Chicken Schnitzel

Schnitzel, or breaded fried chicken cutlets, is a staple at my Mom’s house. I loved it when I was a child and I still get excited every time she prepares chicken schnitzel for dinner. It reminds me of a huge chicken nugget which is probably why it is also beloved by almost every child. Crispy, crunchy, extra juicy, beautiful.

Schnitzel is a popular German dish, usually made with veal or beef, however, I’ve only tried the chicken kind. When schnitzel is on my repertoire, I usually make two batches, one with seasoning for adults and the other less spicy for the kids. My secret ingredient is my grandmother’s spice mix recipe which adds the perfect amount of tangy flavor to both the meat and the bread crumb mix.

Served with some lemon and a pinch of fresh chives or parsley, chicken schnitzel is an absolute favorite!

Ingredients
(Serves 6)
– 3 pounds PARK EAST KOSHER white meat chicken cutlets, thinly sliced
– 1.5 cups Italian Panko seasoning
– 1.5 cups seasoned bread crumbs
– 2 large eggs
– 5 cloves of garlic, peeled and crushed
My grandma’s spice mix
– Olive Oil
– Salt and black pepper (to taste)

Directions
Season cutlets with olive oil, fresh crushed garlic, salt and black pepper to taste, and a pinch of my grandmother’s spice mix. In a separate bowl, whisk the eggs. In a third, glass dish, combine Panko crumbs, bread crumbs,, and a generous amount of my grandmother’s spice mix. If you want a little extra flavor, add fresh, chopped parsley (optional). Over medium-high heat flame, place a pan with olive oil begin to simmer. Dip chicken cutlets in the eggs, and then cover in the cutlets in the breadcrumb mix. The breadcrumbs should stick to the chicken from the egg. Put the breaded cutlets in the pan on the flame, and pan saute until chicken cutlets are golden brown and crisp. This should be about 2-3 minutes on each side. Remove, place on paper towel to absorb excess oil and serve as stated above.

Tip: If you prefer a low fat option, instead of frying the chicken schnitzel you can bake it in the oven. It is not as juicy and crispy, but definitely healthier.
