Very often, my meals would have themes, which depended on the type of gathering I was hosting. Friday nights always meant Shabbat dinner – hearty food, big platters, eat till you can’t move types of meals that included Middle Eastern recipes because of my ex’s Lebanese heritage. Saturdays usually included easy healthy recipes for brunch such as my Asian Salad with Corn I will be featuring today, while Sunday nights were typically BBQs – I was blessed enough to have a very large private terrace with an incredible grill. But during the week, I had more flexibility with my menus. With two small kids, work and meetings, I didn’t have a lot of time to be creative, so I’d try to prepare quick and simple meals. Some nights I’d do Italian, some nights Mexican, some nights Asian, and some nights, I’d make attempts to prepare easy healthy recipes again.
I’m going to start revealing some of my staple meals first, and then I’m going to categorise everything for you into menus as I share more and more recipes.
I’m starting with my Asian Salad with Corn and Avocado because it is one of the quick and simple meals that my guests rant and rave about the most.
Asian Salad with Corn and Avocado
Asian Salad (Serves 6-8)
– 8 ears fresh corn
– 2 avocados, diced
– 1-2 tbsp. sesame oil
– ½ bunch scallions, chopped into rounds
– 3 tbsp. sesame seeds
– Salt and fresh ground black pepper (to taste)
– ½ cup KIKKOMAN seasoned rice vinegar
– ¼ cup WOODSTOCK brown sugar
– 2 cloves garlic, crushed
Preheat oven to broil. Cut corn off the cob and place on a shallow, large baking tray. Evenly season with sesame oil, salt, and pepper. Place tray in oven on top shelf and let broil for 8-10 minutes, mixing frequently, until the corn is golden brown and slightly charred. Dice 2 avocados and finely slice the scallions into ¼’ rounds. Mix together dressing and pour over corn, once cooled. To serve this Asian Salad with Corn and Avocado in the most beautiful way, add avocados, scallions, and sesame seeds on top, but be sure to mix before serving.
