Watermelon is probably my favorite summer fruit and vegetable. Yup, watermelon falls into both categories and is just SO good! Literally the best way to hydrate your body with over 92% water and such an easy way to lose weight and keep a slim figure. The water in watermelon makes you feel full and because it contains natural sugars, eating it as a meal will keep you going through the whole day. A great idea! I love eating it plain, in popsicles, cooling desserts, but most of all – salads.
This watermelon feta salad is vibrant in color, with rich hues from the pink watermelon and green mint, and perfect black and white balance from the feta and olives. An inviting and rather unusual twist of ingredients! Not only is it a beautiful dish to serve, but it is easy to make, and one of my favorite summer aromatic dishes. By the pool in the high heat, at a picnic, barbeque gathering or simply at home with your loved ones, this watermelon feta salad is a promised crowd pleaser!
Watermelon Feta Salad
– 1 whole, seedless watermelon, cubed and chilled
– 2 cups PRESIDENT feta cheese (approx ½ lb), cut into ½” cubes
– 1 cup kalamata olives, pitted and chopped
– 1 cup fresh mint, sliced into thin strips
– 3-4 tbsp. fresh lemon juice
– ¼ cup olive oil
– 1 ½ tsp. salt
– ½ tsp. fresh ground black pepper
Remove rind from watermelon and cut into 1.5 inch cubes. Place in large mixing bowl and put in fridge, covered. Cut feta cheese into ½” cubes, roughly chop olives, and slice mint into thin strips and add to mixing bowl with watermelon. Combine lemon juice, olive oil, salt, and pepper and pour over watermelon salad. Toss gently and garnish with mint.
Tip:Watermelon feta salad is best prepared right before serving.
